Thai Baked Whole Fish in Garlic-Chile Sauce
Ingredients
  • subheading: For the Sauce:
  • ¼ cup oyster sauce
  • ¼ cup soy sauce
  • 8 to 10 cloves garlic, minced or pressed
  • 1 tablespoon fish sauce
  • 2 tablespoons brown sugar
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon freshly squeezed lime (or lemon juice)
  • 1 to 3 chile peppers, thinly sliced
  • subheading: For the Fish:
  • 1 to 2 whole red snapper (gray mullet, or rainbow trout)
  • 4 tablespoon  oil, if grilling
  • ½ cup fresh coriander leaves, garnish
  • ½ cup small fresh basil leaves, garnish
  • Lemon (or lime) slices (or wedges), garnish
