Filled Shortbread Cookies

From my neighbors, the Overbey's. I ate one cookie like this and had to have more. Yum
Ingredients
- 1 cup Unsalted butter
- ⅔ cup sugar
- 1 tsp pure vanilla extract
- 2 cups all purpose flour
- Jelly, Jam or preserves
- subheading: Icing:
- 1 cup powdered sugar
- ½ tsp pure vanilla
- half and half or milk to make a thick but drizzly icing
Steps
- Cream together butter and sugar. Mix in Vanilla. Then add flour. Mix well, then chill no more than one hour. When chilled, roll into 1" balls. Place on a cookie sheet. Make a well in each ball, using your thumb. Fill the well with jelly, jam or preserves, etc. Bake 350° for 12 to 15 minutes or when golden. Cook on cookie sheet 1 to 2 minutes, then transfer to cooking rack.
- Make icing and use a spoon to drizzle it back and forth over your cookies.
