Boiled Chicken + Stock
Ingredients
  • 1 Whole Chicken
  • 2 carrots
  • 1 onion
  • 2 stalks of celery
  • 3 garlic gloves
  • Herbs (bay leaf, rosemary, etc)
  • 2 to 3 cups water
  • Salt
Steps
  1. Break down chicken: legs, thighs, breasts. Leave all bones on.
  2. Rough chop all vegetables.
  3. Put all ingredients in Instant Pot. Add liquid to cover everything, but don’t overfill.
  4. Cook for 20 minutes on high pressure. Allow natural release.
  5. Remove chicken meat and shred for use.
  6. Put bones back in pot. Cook for 1 hour at high pressure.
  7. Strain stock with fine mesh strainer. Cool in refrigerator and skim off fat.
