Cheryl's Gouda Cauli Risotto
Ingredients
  • 2 tablespoons Butter
  • 1 shallot, diced
  • 2 cloves garlic, minced
  • 1 package cauliflower rice
  • Salt
  • Pepper
  • ½ teaspoon oregano
  • ⅛ to ¼ teaspoon red pepper flakes
  • ½ cup chicken broth
  • 1 cup shredded Gouda
  • 2 tablespoons cream or ½ and ½
Steps
  1. Melt butter, add shallots and garlic. Sauté for a couple of minutes.
  2. Add the cauli rice.
  3. Add S & P to taste. Then add chicken broth and let it reduce.
  4. Finally add the Gouda and a little ½ and ½ to cream it up.  Cheryl says It was pretty yummy!
Notes
  • If using ½ and ½, may need a sprinkle of gluccie to thicken.
