Ingredients
  • 12 peeled raw jumbo shrimp, tail-on (about 12 oz.)
  • 1 Tbsp. olive oil
  • 1 garlic clove, finely chopped
  • 1 tsp. finely chopped shallot
  • 1 tsp. fresh lemon zest (from 1 lemon)
  • ½ tsp. ground coriander 3/8 tsp. kosher salt, divided
  • ½ fresh pineapple, peeled and cored, cut into chunks
  • 2 Tbsp. hot chile oil
  • ¼ cup coconut milk, shaken and stirred
  • 1 tsp. honey
  • Fresh mint leaves
