Coconut Pancakes

Ingredients
  • 2 eggs
  • 2 Tbsp coconut flour
  • 2 Tbsp water
  • ¼ tsp each of nutmeg and cinnamon
  • Pinch each of salt and stevia
  • 1 tsp coconut oil
Steps
  1. In a bowl, combine all ingredients except coconut oil.
  2. Let stand on counter for 3 minutes so that it swells up a bit as coconut flour absorbs water.
  3. Heat frying pan over medium heat. Add coconut oil to pan and cover entire bottom of pan as it melts.
  4. Spoon batter mixture into pan and cook over medium heat. Turn each pancake over as it starts to brown, about 2 to 3 minutes per side.
  5. Serve with fresh berries.
