Vegan Spinach Noodle Kugel
Ingredients
  • 12 oz short pasta (see note 1)
  • 16 oz frozen spinach, thawed and drained (or 2 cups cooked spinach)
  • 2 to 3 tablespoon breadcrumbs for topping, optional
  • Sauce
  • 2 - 16 oz blocks ( 396g each) firm tofu, drained but not pressed (see note 2)
  • 1 cup unsweetened non-dairy milk or water
  • ½ cup unfortified nutritional yeast (see note 3)
  • Juice of 1 large or 2 small lemons
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp salt (to taste)
