Fun Facts:

❤️ A long time ago, Rindsrouladen was considered such a special treat and served on Sundays and/or at special events like weddings or birthdays. It is now a regular staple for many years.

❤️ One of Germany’s most famous and oldest meals, Rindsrouladen (also called Rouladen) are thin beef rolls stuffed with onions, smoked bacon, yummy mustard and crunchy pickles. It is then browned and slathered in the rich gravy and served with your favorite potato or noodle.

Ingredients
  • 6 thin slices of lean beef, fat trimmed (5.3 to 5.8 oz. per serving.)
  • 6 Tbsp. yellow onion, finely chopped
  • 6 Tbsp. bacon, finely chopped
  • 6 Tbsp. Kosher Dill pickle, finely chopped
  • 6 tsp. of your favorite mustard
  • ½ tsp. Paprika
  • 1 Tbsp. vegetable or avocado oil
  • 2 Tbsp. Beef "Better Than Bouillon"
  • 1 ½ cups water
  • 1 Tbsp. cornstarch
  • 1 Tbsp. water
  • salt and pepper
Steps
  1. subheading: Meal Prep:
  2. Pound beef flat to tenderize: You are shooting for ⅛"-¼" inch pieces.
  3. Add 1 tsp. of your favorite mustard and spread evenly over the surface facing you.
  4. Sprinkle each piece with salt and pepper.
  5. Place 1 Tbsp. of chopped onion, 1 Tbsp. of chopped pickle and 1 Tbsp. of chopped bacon on each piece of meat.
  6. Roll up tightly and secure with a toothpick.
  7. subheading: Cook Prep:
  8. Select "Sauté" and add 1 Tbsp. of oil to the insert.
  9. When oil is hot (indicator will say "HOT"), brown rolls on all sides. Make sure to work in batches so you don't crowd the pressure cooker as this will slow down the cooking process by sapping heat from the bottom of the insert.
  10. Remove and plate the meat when browned.
  11. Add water to Instant Pot and perform a deglazing of the insert by scraping up all the yummy goodness from the bottom. Add 2 Tbsp. of BtB and mix well.
  12. Add browned beef rolls.
  13. Lock lid in place and seal.
  14. Select "Pressure Cook" and add 20 minutes.
  15. When time is finished, do NPR for 10 minutes and then perform a QR.
  16. subheading: Gravy Prep:
  17. When valve drops carefully remove lid.
  18. In a small bowl, combine cornstarch and 1 tablespoon water. Add this to the existing liquid in the IP while stirring.
  19. Add paprika.
  20. Select "Sauté" and bring to a boil, stirring constantly until it thickens.
  21. Add additional salt and pepper to taste.

  23. Serve with noodles, mashed potatoes or as we do, serve with homemade Spätzle ;-)
