Gluten Free Vegetarian Pizza Quinoa Casserole
Ingredients
  • 1 tbsp extra virgin olive oil
  • 2 cloves garlic minced
  • ½ onion diced
  • 1 tsp dried oregano
  • 1 lb mushrooms thinly sliced
  • ½ yellow bell pepper sliced and cut in half
  • ½ orange bell pepper sliced and cut in half
  • ½ red bell pepper sliced and cut in half
  • ¼ cup black olives sliced
  • 3 ½ cups cooked quinoa about 1 cup raw
  • 1 ½ c tomato pasta sauce
  • 1 ½ cups shredded mozzarella cheese divided
  • ¼ cup grated parmesan cheese
  • Salt and pepper to taste
  • ¼ cup basil leaves for garnish
