Ingredients
  • 4kg kangaroo mince
  • 500g garlic and ginger paste

  • 2 bunches garlic stems
  • 1 x 540g can bamboo shoot strips
  • 2 x 227g cans sliced water chestnuts
  • 2 tspns ground black pepper
  • ½ cup sichuan peppercorns
  • 4 jars Lee Kum Kee plum sauce
  • 60g dashi
  • ¾ cup chilli oil
  • 1 ¼ cup black vinegar
  • 2 tablespoons salt
