  • 2 cups - raspberries fresh or frozen (226g - 8oz)
  • 1 tbsp - water
  • 9 tbsp - sugar 112g
  • 1.5 tbsp - lemon juice
  • 2 - egg yolks
  • pinch - salt
  • 2 tbsp - unsalted butter, softened (28g)
