Hearty Tomato Rice Soup

Ingredients
  • 2 T olive oil
  • 1 lb hamburger, broken into pieces
  • 1 medium onion, chopped
  • 1 cup celery, chopped
  • 3 cloves garlic, minced
  • 1 lg can diced tomatoes
  • 8 cups water
  • 3 beef and 1 chicken buillion cubes
  • ¾ rice
  • 2 T fresh parsley
  • 2 T flour
  • 1 t gravy master
  • salt and pepper to taste
  • pinch basil and thyme
Steps
  1. Heat olive oil in large pot and saute hamburger along with onion, garlic and celery until meat is brown and onion transparent.
  2. Stir in 2 T flour. Add water and buillion cubes and cook about 10 minutes.
  3. Add tomatoes and rice and cook an additional 15 to 30 minutes until rice is tender. Stir often as vegetables tend to settle and add more water if necessary.
  4. Add seasonings, parsley and gravy master.
Notes
  • optional:
  • For extra heartiness add a can of well rinced white beans.
  • Barley instead of rice is wonderful too.
  • or
  • Ten minutes before serving add ½ cup of cream.
