Green Beans & Ground Pork
Ingredients

  • 500g lean ground pork
  • 1 tbsp black pepper
  • 2 tbsp cornstarch
  • 2 tbsp fresh ginger, minced
  •

  • 3 tbsp peanut oil
  • 500g green beans
  • 6 green onions, white stalks separated from green stems and chopped
  • 3 cloves garlic, minced
  • 1 or 2 tbsp rice vinegar
  •  
  • Sauce
  •  
  • 3 tbsp soy sauce
  • 1½ tsp brown sugar
  • ½ cup chicken broth
Steps
  1. Combine pork, black pepper, cornstarch and ginger in a bowl using your hands. Refrigerate until ready to use.
  2. In a large frying pan or wok, heat 2 tablespoons of peanut oil over medium heat. Add green beans and fry for around 5 minutes.
  3. Add minced garlic and the white stalks of the green onions. Continue frying around 5 minutes until beans are soft. Remove from heat and set aside.
  4. Give your pan a quick wipe with a paper towel and add another tablespoon of peanut oil. Add in your meat mixture and cook until browned. Splash mixture with 1 or 2 tablespoons of rice vinegar as it cooks.
  5. When the meat is cooked, add the sauce and green bean mixture as well as the remaining chopped stems of the green onions. Mix to combine.
  6. Serve over rice or eat as an appetizer/sharing platter.
