Ingredients
  • 2 pounds peeled potatoes
  • 4 eggs
  •  
  • 1.5 cups water for bottom of instant pot
  •  
  • Sauce
  • 1 cup mayo
  • 2 Tbs white wine vinegar
  • 1.5 tsp salt
  • 1 tsp sugar
  • ΒΌ tsp pepper
  • 1 cup sliced thin celery
  • 1 Tbs yellow mustard
  • Squirt of sweet pickle relish
Steps
  1. 1. Peel and soak potatoes in water for 30 mins. Place potatoes in strainer In instant pot
  2. 2. Break eggs in small loaf pan and place on top of strainer in the pot
  3. 3. Put water in bottom and pressure cook on high for 4 minutes. Quick release.
  4. 4. While cooking make the dressing. Mix everything up in pot.
  5. 5. Put hot potatoes in dressing. Slice up egg loaf into cubes and mix together.
  6. Chill for at least 4 hours before serving.
