Butternut Squash Mac and Cheese (Gf)
Ingredients
  • 200 g pasta (gluten-free if necessary)
  • Two handfuls kale
  • subheading: For the sauce:
  • ½ butternut squash , peeled and cut into cubes
  • 1 tablespoon oil (olive, rapeseed or vegetable)
  • 1 onion , diced
  • 2 garlic cloves , roughly chopped
  • 120 ml unsweetened almond milk (or sub unsweetened cashew milk, or unsweetened oat milk if nut-free)
  • 2 tablespoons nutritional yeast
  • 400 g tin of white beans , drained and rinsed (haricot beans, cannellini beans or butter beans)
  • ¼ teaspoon smoked paprika
  • Salt + pepper to taste
