Asparagus Pasta Salad with Lemon Dressing
Ingredients
  • 2 cups pasta, dry (short shape)
  • 1 bunch asparagus, woody ends removed and cut into 1-inch pieces
  • 1.5 tsp olive oil (to cook asparagus)
  • 12 ounces cherry or grape tomatoes, halved (341 grams)
  • ¼ cup fresh dill, chopped
  • ¼ cup fresh parsley, chopped
  • ½ cup pecorino cheese, grated (or parmigiano-reggiano)
  • Balsamic glaze, to drizzle

  • ¼ cup olive oil
  • ½ a lemon, juice
  • ½ tsp dijon mustard
  • 1 Tbsp white wine vinegar (or apple cider vinegar)
  • ½ tsp garlic powder
  • ¼ tsp honey
  • Salt + pepper, to taste
