  • 2 teaspoons chili powder
  • ½ teaspoon garlic powder
  • ½ teaspoon coriander
  • 1 cup quinoa (rinsed)
  • 1 bell pepper (finely chopped or thinly sliced)
  • 1 (15-ounce) can pinto beans or black beans (drained and rinsed)
  • 2 cups cheddar cheese (grated)
