Ingredients
  • 1 large carrot, peeled
  • 1 rib celery, leaves removed
  • ¼ medium white onion
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • ½ cup sunflower seeds
  • ⅓ cup vegan mayo (I enjoy Veganaise)
  • 1 teaspoon apple cider vinegar
  • 1 tablespoon dulse flakes (optional) I didn’t have them, so I didn’t use them!
  • ¼ teaspoon salt
  • Ground black pepper
  • 12 slices whole-wheat bread, toasted
  • Lettuce, sliced tomato, and sliced cheese (cheese is my addition.  It’s a food group all of it’s own.  It doesn’t make the sandwich vegan, but still remains vegetarian!)
