Ingredients

  • 1 yellow onion, halved and thinly sliced
  • 1 teaspoon salt, plus more to taste
  • 1 ½ teaspoons curry powder
  • ½ teaspoon ground coriander
  • ½ teaspoon ground cumin
  • Pinch chile powder
  • 1 large can (28-oz) diced tomatoes
  • 1 regular can (13.5 oz) coconut milk
  • ½ cup coconut cream, optional
  • Chopped fresh cilantro, mint or basil, for garnish
