Vegetarian Meat Sauce - Lasagna

Ingredients
  • subheading: Tomato/Meat Sauce:
  • ¾ Cup dry TVP, Reconstituted in Beef-Like Broth (Better than Bullion No-Beef-Base)
  • 1 Tablespoon Oil
  • 1 Tablespoon Garlic, Minced
  • 2 Tablespoon Basil, dried
  • 2 Tablespoons Oregano, dried
  • ⅓ Tablespoon Salt
  • 2 16 oz Cans crushed Tomatoes
  • 1 16 oz can Tomato Paste
  •  
  • 4 Large Sheets Lasagna Noodles
  •  
  • subheading: Ricotta Mixture:
  • ¾ Cup Liquid Eggs
  • 3 ⅛ Lbs Ricotta or Cottage Cheese
  • 1 Cup Parmesan Cheese
  • ¼ Cup Parsley, Dried
  • 3 Tbsp Dried oregano, to taste
  • 3 Tbsp Dried basil, to taste
  • ⅔ Tablespoon Salt
  • ⅓ Tablespoon Black Pepper
  • ½ Tablespoon Nutmeg
  • 2 ¼ Pounds Mozzarella Cheese
Steps
  1. subheading: Make the Tomato/Meat Sauce:
  2. Combine TVP, oil, garlic, basil, salt, crushed tomatoes and tomato paste and set aside.
  3. subheading: Make the Ricotta Mixture:
  4. Combine eggs, ricotta, parmesan, parsley, salt and pepper and set aside.
  5. subheading: Assemble the Lasagna:
  6. Spray pans with pan release and spread bottom with 1 cup of tomato/meat sauce.
  7. Top with sheets of noodles.
  8. Then spread noodles with 3 ½ cups of the ricotta mixture.
  9. Next sprinkle with 18 oz mozzarella cheese.
  10. Now put on 4 ¾ cups tomato/meat sauce.
  11. Repeat noodles, ricotta, mozzarella, tomato sauce in the same quantities.
  12. subheading: Finish the Lasagna:
  13. Bake at 350° for 60 minutes.
  14. Let stand 10 minutes before serving.
Notes
  • You can add Mushrooms, or roasted veggies, or whatever you have left over into the meat sauce to give it added flavor.
  • (Ricotta mixture:)
  • (1 16 oz container of fat free ricotta cheese)
  • (3 to 4 tbsp mozzarella cheese, grated)
  • (3 to 4 tbsp parmesan cheese, grated)
  • (1 clove of garlic, minced)
  • (1 egg)
  • (Sea salt and freshly cracked pepper, to taste)
  • (Dried oregano, to taste)
  • (Dried basil, to taste)
  • (Dash of nutmeg)
