Lentil Loaf (vegan)
Ingredients
  • 1 cup cooked lentils
  • 1 cup cooked brown rice
  • ½ cup vital wheat gluten
  • ¼ cup ketchup (plus more for topping)
  • ¼ cup soy sauce
  • 2 tbs nutritional yeast
  • 1 tsp cumin
  • 1 to 2 tsp liquid smoke
  • ¼ tsp black pepper
Steps
  1. Mix all ingredients together in a large bowl
  2. Press mixture into a small loaf pan
  3. Bake covered 1 hour at 400F
  4. Remove cover, pour ketchup on top and bake 30 minutes uncovered at 400F
  5. Allow to set 30 minutes, slice and serve
