Classic Gluten Free British Shortbread
Ingredients
  • 10 tablespoons ( 140 g) unsalted butter at cool room temperature
  • ½ cup ( 109 g) packed light brown sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon kosher salt
  • 1 ½ cups ( 210 g) all purpose gluten free flour blend (I used Better Batter)
  • ½ teaspoon xanthan gum omit if your blend already contains it
  • Confectioners’ sugar for dusting (optional)
