Mom's Zucchini Bread

Ingredients
  • 1 medium zucchini
  • 2 eggs
  • ¼ cup vegetable oil
  •  
  • 1½ cups flour
  • 1 tsp cinnamon
  • ½ tsp bakin soda
  • ½ tsp salt
  • ½ nutmeg
  • ¾ cup sugar
Steps
  1. Blend zucchini, eggs, and oil
  2. Mix dry ingredients in large bowl
  3. Fold blended ingredients into bowl with the dry ingredients
  4. Bake in greased loaf pan at 350 degrees for 1 hour
Notes
  • Can be gluten free: substitute gluten-free flour and add 1 teaspoon of xanthan gum
