Pea Soup (Mom)
Ingredients
  • 1 pound (2 cups) split peas
  • 5 c chicken stock
  • 5 c water
  • 2 ham hocks or meat ham bone
  • 2 celery ribs w leaves diced
  • 3 tbsp flat Italian parsley
  • ½ tsp dry terragon
  • 4 tbsp Butter (I can’t belive)
  • 1 c diced carrots
  • 1 c diced onion
  • 1leak (white part or parsnip)
  • 1 c SPinach leaves (not necessary)
  • 2tbsp dry sherry
  • ½ tsp pepper
Steps
  1. Rinse peas in strainer, combine w stock and water bring to boil . Add ham, celery, parsley, terragon.reduce heat to medium-low. Simmer 45 minutes. Melt margarine in separate sauce pan. Add carrots, onion, leak/parsnip. Cook u til wilted. 10 min. Add to soup along w SPinach and simmer partly covered 30 min. Remove from heat, remove ham bone. Shred meat. Add sherry and pepper.
