  • 5 red potatoes, cut into chunks
  • 4 carrots, peeled and sliced on the diagonal
  • 1 green bell pepper, seeded and diced
  • 1 red bell pepper, seeded and diced
  • 1 yellow bell pepper, seeded and diced
