Healthy Lemon Blueberry Muffins (Vegan, Gluten-Free, Oil-Free, Refined Sugar Free)
Ingredients
  • 1 tbsp ground flaxseed + 3 Tbsp water
  • ½ cup unsweetened almond milk (or any non-dairy milk)
  • 3 tbsp fresh lemon juice
  • ½ cup unsweetened applesauce
  • ¼ cup coconut sugar (brown sugar or organic cane sugar works too)
  • ⅓ cup pure maple syrup
  • 2 tsp vanilla extract
  • 2 tbsp tahini (cashew butter or melted coconut oil works too)
  • 2 heaping Tbsp lemon zest (about 2 to 3 lemons)
  • 2 ¼ cups oat flour
  • ½ cup almond flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 ½ cup fresh or frozen blueberries (if using frozen, toss them in ½ Tbsp arrowroot starch or cornstarch)
