Tommy Bahama Island Slaw with Lime Vinaigrette Dressing

Ingredients
  • ½ cup thinly-sliced red onion
  •  
  • 1 cup shredded green cabbage
  •  
  • ½ cup thinly sliced jicama, cut into 2" long pieces
  •  
  • 1½ tablespoons chopped cilantro, leaves picked
  •  
  • ¼ cup fresh-squeezed lime juice
  •  
  • ½ cup blended oil (3 parts canola:1 part extra virgin olive)
  •  
  • Salt and black pepper, to taste
  •  
Steps
  1. Place lime juice in a non-reactive medium bowl. Season with salt and pepper, to taste. Stir until salt dissolves.
  2. Slowly whisk in oil until emulsified.
  3. Place red onions in an ice water bath for 20 minutes. This will give the onions a less intense flavor. Drain well and place in a medium bowl.
  4. Add cabbage, jicama and cilantro. Add vinaigrette and toss well. Refrigerate until needed.
