Quick Fall Minestrone
Ingredients
  • 1 T canola oil
  • 1 c. chopped onion
  • 2 garlic cloves, minced
  • 6 c. vegetable broth
  • 2½ c. (¾ in) cubed peeled, butternut squash
  • 2½ c. (¾ in) cubed peeled, potato
  • 1 c. (1 in) cut green beans (about ¼ lb)
  • ½ c. diced carrot
  • 1 tsp dried oregano
  • ¼ tsp black pepper
  • ¼ tsp salt
  • 4 c. chopped kale or spinach
  • ½ c. orzo (uncooked)
  • 1 (16 oz) cannellini beans, rinsed and drained
