  • 1 large cucumber, peeled and chopped
  • 2 cups small cherry or grape tomatoes, cut in half
  • 1 cup red, yellow, or orange bell peppers, chopped
  • ½ cup Kalamata olives, pitted and chopped
  • 6 ounces (about 1 cup) crumbled feta cheese
  • Optional: ½ cup chopped red onion
