  • 4 tbsp low-sodium soy sauce
  • 2 tbsp tomato paste
  • 1 tsp mustard
  • ¼ tsp garlic powder
  • ¼ tsp ground cinnamon
  • ¼ tsp ground black pepper
  • ½ tsp ground coriander
  • ½ tsp ground cumin
  • 1 tsp dried oregano
  • subheading: For the grilled tofu gyros:
  • 4 pita breads
  • vegan tzatziki (recipe above)

  • 2 cups shredded lettuce
  • 1 cup cherry tomatoes sliced
