Greek Spinach or vegetable pie
Ingredients

  • 1 ⅓ cups all-purpose flour
  • ⅔ cup whole-wheat flour
  • 1 tsp salt
  • ½ cup 3 tbsp olive oil
  • 5 tbsp ice water
  • subheading: Spinach Filling:
  • 3-10 oz packages frozen spinach (thawed, water squeezed out)
  • 3 tbsp olive oil
  • 6 green onions, chopped
  • 2 cloves garlic, minced
  • 1 lb block feta cheese, crumbled
  • ¼ cup chopped fresh parsley (or 1 tbsp dried parsley)
  • 4 eggs, lightly beaten
  • 1 ½ tsp oregano
  • 1 ½ tsp dill
