Sue's Salento Meatballs
Ingredients
  • Salento style meatballs
  •  
  •  500 g minced beef ( or beef/pork)
  •  100 g finely grated cheese - a mix Parmesan and pecorino is the best - something tasty
  •  2 eggs - beaten
  •  ½ glass red wine - you can omit this if necessary but it makes a difference
  •  Finely chopped parsley
  •  100 g stale bread
  •  1 glass milk
  •  1 clove garlic, minced
  •  salt
  •  pepper
Steps

  2. Soak the bread in the milk, then squeeze it well and break it up into crumbs.
  3. Put the minced meat in a large mixing bowl, make a well in the centre and add the beaten eggs, the chopped parsley, the grated cheese, the bread, ½ teaspoon of salt ( less if the cheese is also salty), the garlic and the pepper.
  4. Mix everything together well ( I use my hands!). If the mixture is a little too soft, add some breadcrumbs.
  5. Make walnut sized balls and roll them around in the red wine, place them on a plate, cover them with cling film and put them in the fridge for a couple of hours ( or not if you don’t have time!)
  6. Drop them gently into your tomato sauce - 5 mins HP
