Crustless Mini Chicken & Veggie Quiche

Ingredients
  • 1 = ½ C Shredded  “Frozen”  Med. Skinless Boneless Chicken Breast
  • ¼ C  Steamed Broccoli
  • ¼ C Steamed Cauliflower
  • ¼ Grated Cheddar Cheese
  • ¼ tsp. Onion Powder
  • 4 Eggs
  • ⅛ C milk 2%
  • Salt & Pepper
  • Spray Olive Oil
  • 1 ⅓ C cold water into liner
Steps
  1. Place the Chicken in water place trivet over & them SS Steamer Basket filled with the Broccoli & Cauliflower. Set Manual for 4 minutes ( like my veggies cooked through). When the IP beeps remove veggies and Chicken into a bowl and shred. Add Salt & Pepper, Eggs,Onion Powder,Cheese and ⅛ C milk. Mix together.
  2. Spray ramekins wit Olive Oil and fill almost to the top of each.
  3. Place trivet back into IP and set two ramekins on top - now place second trivet on top of those and add two more ramekins.
  4. Cook on Manual 25 mins. NPR 12 minutes and the finish with QR.
  5. Popped under oven broiler with light sprinkle of cheese for 3 minutes.
Notes
  • If done in silicone cup, I’d probably stick to the original 30 minutes on Manual and 12 min. NPR, as silicone should slow the cooking time.
