Arepas Con Queso (Vegan)
Arepas con Queso, or Cheese Arepas, are delicious cheesy corncakes that are a popular street food in Colombia, Venezuela, Bolivia, and other parts of South America. This recipe uses a special type of cornmeal, or corn flour, called masarepa or arepa flour.

Ingredients
  • 1 cup warm water, plus additional if needed
  • 1 tablespoon vegan butter
  • Pinch salt
  • 1 ½ cups masarepa (precooked cornmeal-use white or yellow)
  • 16 ounces shredded vegan mozzarella cheese, divided
  • 1 tablespoon oil
Steps
  1. In a medium bowl, combine the warm water, butter, and salt. Add about half of the cornmeal to the bowl and use your hands to mix.
  2. Add the remaining cornmeal and mix until it is completely incorporated.
  3. Add half of the cheese and knead to incorporate it.
  4. Take a baseball size ball scoop of the dough and form it into a ball.
  5. Make a well in the center and fill it with about 1 tablespoon of the
  6. cheese.
  7. Close up the ball of dough around the cheese and then flatten it between your palms to a patty about ½-inch thick.
  8. Repeat with the remaining dough and cheese.

  10. To cook on the stovetop, heat the oil in a nonstick skillet over medium-high heat.
  11. Add the arepas and cook for 3 to 4 minutes per side, until they are golden brown and crisp.

  13. To cook in an air fryer, brush the arepas on both sides with the oil and place them in the air fryer basket in a single layer (you’ll likely have to cook in batches).
  14. Cook at 375°F for 3 to 4 minutes, then flip the arepas over and cook for 3 to 4 minutes on the second side, until the cheese is melted and the outside is golden brown and crisp.
  15. Let cool for a couple of minutes before serving.
Notes
  • Arepas can be cooked and stored in the refrigerator for up to 3 days. Reheat them in the air fryer, cooking them at 375°F for about 3 to 4 minutes per side if they are cold or about 2 minutes per side if you've let them come to room temperature before cooking.
  • Arepas can be frozen after cooking. Be sure to wrap them tightly in plastic wrap and put them in a resealable plastic bag. You can cook them from frozen in the air fryer at 375°F for about 4 minutes per side.
