The Original Schnitzelwich

I'm a Cornell culinary school graduate, love reworking recipes to become plant-based, enjoy international cuisines, love it hot & spicy. I have an extensive recipe collection, which I'm hoping to digitize here to make it easier for me to find all of my ideas for twisting :)

At Tábor, pork schnitzel is served on rolls to create one of Portland, Oregon's most satisfying street-food sandwiches. From Bon Appetit.

5 tablespoons olive oil, divided

2 tablespoons sour cream

2 tablespoons prepared horseradish

1 large onion, thinly sliced

Breaded Chick'n or Turkey Cutlet

roasted pepper and eggplant spread (Ajvar)

ciabatta rolls or 4 other crusty rolls, halved horizontally

romaine lettuce leaves, torn in half crosswise
