Bacon and Scallion Farrotto
Ingredients
  • 4 cups low-sodium chicken broth

  • 2 bunches scallions, green and white parts separated, thinly sliced
  • 2 cups semi-pearled farro
  • ½ cup dry white wine
  • 2 teaspoons fresh lemon juice
  • ½ cup grated Parmesan, plus shaved for serving
