Mom Kozak used a 4 part water/1 part vinegar recipe
Servings: ½ bushel of cucumbers = 19 to 20 quart jars
Servings: 1/2 bushel of cucumbers = 19 - 20 quart jars
Ingredients
- Brine for 6 quarts
- 8½ cups water
- 6½ cups white vinegar
- ¼ cup pickling salt
- ¼ cup white sugar
- 1 tbsp pickling spice
- Fresh garlic as desired for each jar (3 to 4 cloves per jar)
- Fresh dill top and bottom of each jar
- Optional pinch alum in each jar
Steps
- Clean jars
- Garlic and dill on bottom and top
- Pack cucumbers cut or whole
- Boil brine
- Pour brine into jars leaving ½ inch head space on top.
- Place lids on loosely
- Place in preheat oven 275 °F
- Bake for 20 to 30 minutes depending on size of jar. Pickles loose bright green colour.
- Remove from oven, tighten lid.
- When cool wipe down jars before storing.
- Let set about 6 weeks prior to opening.
- Enjoy

- May slices cucumbers for sandwiches and jar.
