  • 1 cup uncooked brown rice, I used brown Basmati rice,
  • 2 teaspoons olive oil, divided
  • 1 tablespoon fresh garlic, chopped
  • 2 teaspoons ginger, from a jar,
  • ¼ teaspoon crushed red pepper
  • 1 pound boneless, skinless, chicken breast, cut into ½-inch pieces
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped red bell pepper
  • 1 (20-ounce) can pineapple chunks in juice, undrained
  • ⅓ cup reduced-sodium soy sauce
  • 1 tablespoon rice vinegar or seasoned rice vinegar
  • 2 tablespoons flour or 1 tablespoon cornstarch (gluten-free)
  • 2 teaspoons brown sugar
  • 2 packages Stevia, Truvia, Splenda or your favorite sugar substitute
