- 1 Tablespoon Lime Juice
- 2 Tablespoons Pineapple Juice
- 2 Tablespoons Safflower or other light oil
- Salt and pepper to taste
- 1/4 Cup Pineapple Chunks
- Small Can Chopped Water Chestnuts
- 5-6 Oz Baby Salad Greens
- In a large bowl combine lime and pineapple juices, oil, salt and pepper, and whisk until thoroughly emulsified.
- Toss gently with remaining ingredients and serve immediately.
