Ingredients
  • 1 Tablespoon Lime Juice
  • 2 Tablespoons Pineapple Juice
  • 2 Tablespoons Safflower or other light oil
  • Salt and pepper to taste
  • 1/4 Cup Pineapple Chunks
  • Small Can Chopped Water Chestnuts
  • 5-6 Oz Baby Salad Greens
Steps
  1. In a large bowl combine lime and pineapple juices, oil, salt and pepper, and whisk until thoroughly emulsified.
  2. Toss gently with remaining ingredients and serve immediately.
