Pan Seared Pork Chops with Mushroom Gravy
Ingredients

  • 2 bone-in thick cut pork-chops (cut ~2 inch thick)
  • 2 tbsp. olive oil
  • kosher salt, to taste
  • black pepper, to taste
  • subheading: FOR THE MUSHROOM GRAVY:
  • ¼ onion, diced small
  • 8 oz (or 4 cups) sliced baby bella mushrooms
  • 1 tbsp. ghee
  • 1 tbsp. olive oil
  • 1 tbsp. balsamic vinegar
  • 1 cup beef broth (chicken or vegetable is okay, too)
  • 2 tsp. arrowroot starch
  • 1 clove garlic, minced
  • ½ tsp. fresh thyme leaves (or ¼ tsp dried)
