Roasted Cauliflower, Quinoa & Feta Salad
Ingredients
  • 1 whole head cauliflower, broken into florets
  • 2 to 3 tablespoons extra virgin olive oil
  • Pinch sea salt & pepper
  • 1 cup baby spinach, chopped
  • 1 cup quinoa, rinsed
  • 1 teaspoon powdered veggie or chicken stock
  • 400g canned chickpeas, drained and rinsed
  • 5 spring onion, finely sliced
  • 100g Danish feta cheese, crumbled
  • ½ cup flaked almonds, toasted
  • subheading: Dressing:
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon white wine vinegar
  • ½ lemon, juiced
  • 1 tablespoon honey (optional)
  • Sea salt
