Brie Mashed Potatoes
Ingredients
  • 2 lbs baking potatoes, peeled and diced into 2 in
  • 1 clove garlic, minced or pressed
  • ½ c thinly sliced green onion
  • 2 T butter
  • 4 oz cream cheese, softened and cut into cubes
  • ½ c half and half
  • ¾ tsp salt
  • ¼ tsp pepper
  • 8 oz cold Brie or Camembert, rind removed and diced.
  • thyme or parsley for garnish
Steps
  1. Cook potatoes in boiling, salted water for 15 min or until tender. Drain well.
  2. Saute garlic and green onion in butter for 2 minutes until softened
  3. Mash potatoes. Beat in garlic butter mixture, cream cheese, half and half, salt and pepper.
  4. Fold in Brie
  5. Place in 1 ½ quart casserole.
  6. Bake at 450F for 15 minutes or until top begins to lightly brown. Garnish with thyme.
Notes
  • triple recipe for larger crowds to make ½ tray Can freeze ahead. Assemble. Will be liquid when defrosted. Just bake 400F for 45 min, uncovered.
