Lemony Chicken Stew
Ingredients
  • 2 pounds boneless skinless chicken thighs or breasts, cut into bite-sized pieces

  • 5 cloves garlic, minced
  • ¼ cup all-purpose flour
  • ½ cup dry white wine (or chicken stock)
  • 4 cups chicken stock
  • 1 pound Yukon gold potatoes, chopped into bite-sized pieces
  • 1 bay leaf
  • 2 teaspoons fresh thyme leaves
  • ⅔ cup heavy cream
  • 2 to 4 tablespoons freshly-squeezed lemon juice
