The Food Lab's Buttermilk Biscuits
Ingredients
  • ½ cup (120ml) buttermilk
  • ½ cup sour cream (4 ounces; 113g)
  • 10 ounces all-purpose flour (2 ¼ cups; 284g), plus additional for dusting
  • 1 tablespoon (12g) baking powder
  • ¼ teaspoon baking soda
  • 1 ½ teaspoons Diamond Crystal kosher salt; for table salt, use half as much by volume
  • 8  tablespoons cold  unsalted butter (4 ounces; 113g), cut into ¼-inch pats, plus 2 tablespoons (1 ounce; 28g) melted unsalted butter for brushing
