Ingredients
  • 2 Pounds Fresh Clams
  • 6 cups water
  • 4 slices thick-cut bacon, sliced into ⅓-inch thick pieces
  • ½ yellow onion, chopped
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 4 large red potatoes, diced
  • 2 celery stalks, chopped
  • 2 bay leaves
  • 5 sprigs fresh thyme
  • 2 Tbsp. butter
  • 3 Tbsp. flour
  • 2 and ½ cups reserved clam broth
  • 1 cup milk (I use skim)
  • 1 and ½ cups half-and-half
  • ¼ cup fresh parsley, chopped (optional, for garnish)
