  • 2 tablespoons Peanut or Vegetable Oil
  • 500 grams Firm Tofu (cut into cubes)
  • 400 grams Small Button Mushrooms (Cleaned and Trimmed)
  • 1 teaspoon Lemon Zest (Grated)
  • 2 cups Coconut Milk (Unsweetened)
  • 1 cup Salt-reduced Vegetable Stock
  • 350 grams Singapore Egg Noodles
  • 1 1 ⁄2 cup Fresh Mung Bean Sprouts
  • 2 Spring Onions (Thinly Sliced)
  • 3 Hard Boiled Eggs (to serve)
  • Lime Wedges (to serve)
