Vegetable Tart (Beautiful Baking Juliet Sear)
Serves: 6-8

For this recipe you will need a 20cm/8in (3cm deep) loose bottomed fluted tart case and baking beans or rice.
Ingredients
  • subheading: For the pastry:
  • 250g plain flour, plus a little extra for dusting
  • 125g cold butter, diced
  • 30g parmesan, grated
  • 1 lemon, zest and juice of (a pinch of zest and juice is for the filling)
  • 1 medium egg yolk
  • subheading: For the filling:
  • 2 carrots, peeled
  • 1 aubergine
  • 2 courgette
  • 1 lemon, juice of
  • 250g mascarpone
  • 2 medium eggs
  • 50g cheddar, finely grated
  • 50g parmesan, finely grated
  • 150g pesto
  • 100g sundried tomato, finely chopped
  • Olive oil
  • Salt and freshly ground black pepper
  •  
  • To serve: Green salad
