Ingredients
  • ⅓ bag dried soy curls
  • 1 small yellow onion, sliced into half moons
  • 1 bell pepper (any color), sliced into ¼" thin strips
  • 2 to 3 scallions, chopped
  • 1 to 2 Tbsp chopped cilantro (optional)

  • ½ Tsp ground cumin
  • ½ tsp sweet or smoked paprika
  • ½ to 1 tsp chipotle chili powder (use less if your chili powder is very hot)
  • Salt, black pepper to taste
  • subheading: To serve:
  • 6 to 8 warm corn or flour tortillas, preferably organic

  • Any other toppings of choice (optional) - sriracha, cashew cream, vegan cheese shreds, etc.
