Maple and Pecan Hot Cross Buns with Bacon Butter

  • 1 cup (150g) strong (baker’s) flour
  • 4 thin slices streaky bacon
  • 250g unsalted butter, softened

  • 3 tsp dried yeast
  • 1 ¼ cups (310ml) maple syrup, plus extra to brush
  • 150g unsalted butter, melted, cooled
  • 1 egg, plus 1 egg yolk
  • 2 tbs ground cinnamon
  • 2 tsp mixed spice
  • 5 cups (750g) strong (baker’s) flour
