Ingredients
- 1 cup water (slightly warm - about 90°)
- 2 eggs, slightly beaten (room temperature)
- 1 tsp honey (raw) - don't leave this out; the yeast needs it and will eat up the carbs
- 2 TBLS softened butter (Kerrygold brand)
- 1¼ cup vital wheat gluten (Bob's Red Mill)
- ⅔ cup ground golden flax meal (Bob's Red Mill)
- ½ cup oat fiber (Honeyville brand or Trim Healthy Mama brand - may have to order)
- ¼ cup Swerve sweetener (confectioner)
- 1½ tsp pink sea salt
- ½ tsp xanthun gum
- 1 TBLS yeast (SAF instant)
Steps
- Layer ingredients per machine manufacturer's instructions. For my machine, I layer in the order listed above.
- Choose the bread machine cycle that's appx 3½ to 4 hours. On mine, it's called "Basic."
Notes
- 2 net carbs per slice.
- Mine only made 8 slices, but they are hearty! I cut them each into half which will be more than enough for toast or a sandwich. Deidre used a horizontal breadmaker, whereas mine is upright... maybe the difference.
